As the temps cool and autumn settles in, I start to crave a darker, richer beer. Enter Elysian Brewing Company’s Dragonstooth. While technically it’s an imperial oatmeal stout, this beer is better likened to a dark chocolate bar in a bottle. A longtime staple in the Seattle brewery’s lineup, this is a beer that many a drinker has likely enjoyed before, but also one that’s well-balanced and satisfying. Needless to say, it’s worth revisiting.
Dragonstooth pours an opaque, dark brown in color. A dense, fluffy head fades from toffee to cream along the edges of the glass. As you drink, its pillowy appearance invites you to partake again, unlike the menacing appearance of the clawing, sharp-toothed dragon on the label.

A varied malt bill of crystal and roasted malts bring scents of dark chocolate and roasted coffee on the first inhale. It reminds me of a mocha latte. Mixed in with these rich aromatics are faint hints of citrus and cherry, derived from the Cascade and Centennial hops used for finishing in this beer, are also notable.
Dragonstooth is just as robust in flavor. At first taste, roasted malt character gives way to deep notes of dark chocolate and espresso. The intense matl flavors are accentuated by a mild, slightly citrusy hop bitterness from the Magnum hops used for bittering. It goes down smooth and lends a light warmth to the tongue on the swallow.
Like a dark chocolate bar, Dragonstooth is intense, while not being too sweet, and ends with a pleasant bittersweetness. At 8.1% ABV and 56 IBUs, it’s a satisfying beer when you’re looking for something with a little something extra—whether it’s to pair with a decadent dessert or just to enjoy fireside on a chilly, fall evening.
