Spring's Brewery & Bar Openings & Closings

Breweries are opening at record pace and there is no bubble in sight, but like any small businesses, breweries must adapt and learn or they can face shutting their doors. Periodically, we’ll track openings and closings across the industry to keep you informed.


March 2017
Docent Brewing
San Juan Capistrano, CA

The recently opened brewery and public house focuses on balanced, approachable beers and fermented food. Situated in an industrial area, the brewpub is also accessible via mountain bike off the San Juan Creek Trail. A docent is a person who acts as a guide, and Docent seeks to guide visitors through the beer adventure with unique flavors and no specific style focus.

Home brewer turned head brewer Bryan Giesen churns out a list of seven beers that range in descriptions from refreshing, tropical, and wheat kissed to bready, sturdy, and assertive. The initial offerings include a trail beer, a beach beer, and a Manhattan cocktail inspired red ale, but each is approachable and crowler worthy with only one ABV reaching above 6.25%.

Asylum Brewing
Anaheim, CA

Northeast Anaheim’s Asylum Brewing becomes the latest Anaheim operation to open its doors. With a soft opening already in the books, Asylum will open a cozy 7bbl brewery and industrial taproom this month.

The letterboard menu shows off eight libations all over the beer spectrum. The brewery will look to cash in on the hazy IPA trend with Too Much Juice and Motorcycle Hops, the latter being a double IPA featuring Mosaic hops. For the less luponicly inclined, a stout, brown ale and honey blonde among other offerings should keep you covered no matter your taste.

Hexagon Brewing Company
Knoxville, TN

The first of six new breweries expected to launch in Knoxville in 2017, Hexagon Brewing will host its grand opening April 21. Located in the Fountain City neighborhood, Hexagon is named after the cross section shape of a bamboo fly rod. The brewery boasts a 20bbl production system with a smaller 3.5bbl system for testing.

Hexagon will back up its American pale ales and IPAs with German style lagers and a dunkel. While the tap room will not serve food, the brewery will host food trucks throughout the week.

The aggressive punk and metal themed brewery will continue to build on Hunsaker’s reputation for producing hop-forward beer.”

Abridged Beer Company
Knoxville, TN

Another Knoxville brewery opening this spring, Abridged Beer Company is set to begin serving in May. The West Knoxville brewpub seeks to capitalize on the city’s developing palate for craft beer, and will focus on session beers.

The name is a play on the session-beer emphasis of the brewery. Brewer Jesse Bowers will crank out the quaffable list of offerings, with most falling under 5% ABV.

Green Cheek Beer Company
Orange, CA

It appears the old Valiant Brewing space will not stay vacant for long. Details are scarce on the new Green Cheek Beer Company, but two former Noble Ale Works team members will head up the operation.

Evan Price (former CEO of Noble) and Brian Rauso (former head brewer) are seeking to open their new project in time for OC Beer Week May 19th - 28th.

Summer 2017
Grains of Wrath Brewing
Camas, WA

Former Fat Head’s brewer Mike Hunsaker is set to open Grains of Wrath Brewing, a 10bbl brewpub in Camas, WA. The aggressive punk and metal themed brewery will continue to build on Hunsaker’s reputation for producing hop-forward beers with a special early access arrangement with HopUnion for new developmental/test hops.

The brewery has already released several collaboration offerings in advance of opening, including its first packaged beer – an IPA hopped with Denali, Citra, Vic Secret, and Waimea available in 16 oz. cans April 5th.

Valiant Brewing
Orange, CA

Orange’s Valiant Brewing ceased operations March 31. Established in 2013, Valiant produced 1,200 barrels last year which included four year round offerings, seasonals and special releases. The brewery focused on American and Belgian inspired beers brewed with a spirit of overcoming challenges and adversity.

The brewery’s Belgian Blonde Axiom and saison Mounds of Grounds scored well in our beer directory. Founder and head brewer Brian Schrodpfer outlined the choice he made to shut down rather than take outside investment in a letter on the brewery’s website.

Pateros Creek Brewing Co.
Fort Collins, CO

Operating since 2010, Pateros Creek Brewing Co. shut its doors on April 1. After the area around the brewery was remodeled, co-founder Steve Jones determined the new rent was not tenable. The brewery hosted a going-away on its last day and will sell its equipment.

The brewery’s offerings were generally not celebrated by the Untappd community. Only the Cache La Porter, a sessionable brown porter, received over 1,000 check-ins or over a 3.50 rating.
